Grilled Chicken Salad


There's nothing visually that's going to knock your socks off about this salad, it's all about taste here folks. This is a salad I had a long time ago at Milestones Restaurant and it was so good I had to duplicate the recipe. You can certainly buy a peanut dressing and mix it with honey and lime juice but making it from scratch is really easy so you might want to give it a try. Plus, by omitting the honey and lime, you have yourself a delicious homemade peanut sauce that you can use for lots of things like chicken, beef and shrimp, just to name a few. This salad is at the top of the menu list at my house, it's just fantastic.

RECIPE:
2 Grilled chicken breasts, cooled and sliced thinly
1 head lettuce (green leaf, romaine etc.)
1/2 cup chopped cilantro
tortilla chips, broken into bite size pieces

Dressing:
1/4 cup peanut butter
1/8 cup soy sauce
2 tsp brown sugar
1 tsp rice vinegar
1/2 tsp chili sauce such as sambal
1 lime, juiced
1/8 cup honey

Whisk all ingredients in a bowl and let sit for about 30 minutes. If you prefer a thinner consistency just add a little water.

In a large bowl mix lettuce and cilantro. Toss with dressing to thoroughly coat. Place lettuce on a plate, top with sliced chicken and sprinkle with tortilla chips.
